Why is my cursor stuck in the RealVNC Viewer window?

This will happen if 'Relative Pointer Motion' is enabled in RealVNC Viewer. 

To resolve this, you need to press F8 on your keyboard (or FN + F8 on macOS) while connected through RealVNC Viewer. Then untick 'Relative Pointer Motion' in the menu that appears.
