Is there a way to prevent end users from turning on accidental Cloud Access for the servers?
My organisation has VNC Connect Enterprise and we use direct connections.
We don't want our users enabling cloud connections - is there a way we can prevent them from doing this?

Yes, you can lock down VNC Connect using policy. On Windows, we have a guide for using Group Policy here: https://help.realvnc.com/hc/en-us/articles/360005488898
For VNC Server, disable the AllowCloudRfb setting: https://help.realvnc.com/hc/en-us/articles/360002251297-VNC-Server-Parameter-Reference-#Allow_Cloud_Rfb
For VNC Viewer, disable the AllowSignIn setting: https://help.realvnc.com/hc/en-us/articles/360002254618-VNC-Viewer-Parameter-Reference-#viewer-allowsignin
